Wine pairings that shouldn’t work, but do.

Some things should never go together—dress socks and sneakers or oily fish and Bordeaux—but some things that you might not expect to work with each other, do. The alchemy of taste is a mysterious thing, and while there’s no accounting for personal preferences, there are chemical properties to food and wine that transcend opinions.
